Ingredients

  • 2 tablespoons flax meal
  • 5 tablespoons water
  • 1 3/4 cups oat milk
  • 1/2 cup maple syrup
  • 1/4 cup Country Crock® Plant Butter Tub with Avocado Oil plus extra for greasing, melted
  • 1/4 cup (60 grams) mashed ripe bananas
  • 2 cups rolled oats
  • 1 cup quick-cook rolled oats *
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups assorted berries such as blueberries, raspberries, gooseberries
  • 2 tablespoons hemp seeds
  • shredded coconut for topping, optional

Instructions

  1. Preheat the oven to 350 F. Grease a 9''x9'' casserole dish.
  2. Whisk flax meal and water in a small bowl. Keep flax eggs aside while you measure the other ingredients. As the flax and water sit, the mixture will thicken into a gel.
  3. When the flax mixture has thickened, stir all ingredients in a large bowl with a stiff spoon or spatula. Transfer to a casserole dish. Bake for 30-35 minutes. Top baked oatmeal with a spoonful of plant butter, hemp seeds, and toasted coconut chips.
