Ingredients

  • 3 lbs multicolored baby potatoes, washed well
  • 1/2 cup Country Crock® Original Spread Original Spread
  • 8 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 1/2 tablespoons kosher salt, plus more for the water
  • 1/2 teaspoon freshly ground pepper
  • 1/3 cup fresh chives, minced
  • 1/3 cup fresh parsley, minced
  • 1/3 cup fresh basil, minced
  • 1/4 cup fresh dill, minced

Instructions

  1. Add potatoes to a large pot of well salted water. Bring to a boil over high heat. Reduce to a simmer and cook the potatoes until tender when pierced with a knife, but not yet falling apart, about 8-12 minutes. Drain potatoes and rinse with cold water to keep them from overcooking and are easy to handle. Halve or quarter potatoes into 1-inch pieces. Transfer to a large mixing bowl.
  2. Melt the Country Crock Original Spread in a small skillet over medium heat. Add the minced garlic and cook, stirring constantly, until lightly golden brown. Remove from heat and pour into a small mixing bowl.
  3. Add vinegar, Dijon mustard, salt and pepper to the mixing bowl and whisk until well combined.
  4. Toss potatoes with fresh herbs and pour buttery Country Crock mixture over top. Toss until well combined. Taste and add more salt and pepper, as desired. This salad is delicious served warm, room temperature, or cold!
*Make it ahead of time: If you’re planning for a gathering or want to save time, you can make the salad ahead of time. Prepare all the components separately, and mix them together just before serving to maintain the freshness and flavors.
