Mix the Country Crock® with parsley and garlic. Spread over one side of each piece of sandwich bread.
Spread a thin layer of pizza sauce on the other side of every slice of bread. Top 4 slices with a sprinkle of mozzarella, pepperoni and more mozzarella. Place second piece of bread, pizza sauce side down to form a sandwich that has parsley Country Crock spread on the outside of both slices of bread.
Preheat a cast iron skillet or skillet over medium-low heat, melting a thin layer of Country Crock spread in the pan. Add one sandwich and cook until the bottom is golden brown and the cheese begins to melt, about 2 minutes. Flip the sandwich and cook until the second side is golden brown and the cheese is melted, about 2 minutes. If your sandwich is browning too quickly, reduce the heat.
