Instructions

  1. Preheat oven to 350°F. Brush a 9x13 casserole dish with Country Crock Original Spread. Line the bottom with tater tots.
  2. Heat a large skillet to medium heat and add 1 Tbs of Country Crock. Add the sausage and cook, breaking the sausage up with a spoon, until cooked through, about 5 minutes.
  3. Reserve about ¼ cup of diced peppers for topping, then add onion and bell peppers to skillet and cook, stirring occasionally, until veggies are softened, about 6-8 minutes. Let cool slightly then sprinkle over the tater tots. Sprinkle with half the grated Cheddar cheese.
  4. In a large bowl, whisk together eggs, milk, melted Country Crock, salt, and pepper. Pour over the casserole dish. Sprinkle dish with Mozzarella and remaining Cheddar cheese. Top with the remaining diced peppers.
  5. Place in a preheated oven and bake until set in the middle, about 45-50 minutes. Let stand for 5-10 minutes before serving. Garnish with green onions and enjoy!
You can substitute whatever fresh vegetables you have on hand! Frozen veg would work well for this too.
