- 2 1/4 cups all-purpose flour, plus more for your rolling surface
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar

- 1 large egg, room temperature
- 1 tablespoon vanilla extract
- 1/2 teaspoon almond extract
Zesty Royal Icing
- Zest of 2 limes
- Zest of 1 large orange
- Zest of 2 lemons
- 4 cups confectioners sugar
- 10 tablespoons lukewarm water
- 3 small bowls of ice water for zests

Instructions
- Whisk the flour, baking powder, and salt together in a medium sized bowl.
- In a large bowl, using a hand mixer, beat the Country Crock® Plant Butter and sugar on high until smooth. Add the egg, vanilla, and almond extract until combined. Make sure you scrape down the sides of the bowl as you're beating.
- Add the dry ingredients to the wet ingredients and beat until combined. Divide the dough into 2 equal parts. Place each piece onto a lightly floured surface and roll into a disk. Cover in cling wrap and refrigerate for at least 1 hour.
- Once chilled, preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper and set aside. On a floured surface roll out each dough to ¼ inch thickness. Using a cookie cutter, cut your cookies into desired shapes and place on the baking sheets. Retool the remaining dough and continue.
- Bake for 12 minutes until lightly browned around the edges.
- While your cookies are baking, make your Royal icing and zest your fruit. Peel each fruit with a zester and place the zests into ice water to curl.
- Using a hand mixer, mix all the icing ingredients together in a medium sized bowl and set aside. Remove the cookies from the oven and allow them to cool on a wire rack before icing.
- Once cooled, drizzle with Royal icing and sprinkle with desired zests.
