  • 3 plums, cored and cut into 1/4'' slices (about 3 cups sliced plums)
  • 1/2 cup (1 stick) Country Crock® Plant Butter Sticks with Avocado Oil
  • 1 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon kosher salt
  • 1 cup sugar
  • 1 cup oat milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 tablespoon raw sugar

  1. Preheat oven to 350F.
  2. Melt plant butter in a cast-iron skillet.
  3. In a large mixing bowl, whisk together flour, baking powder, and salt. Add sugar, milk, almond extract, and vanilla to the bowl, and whisk until well combined. Whisk in melted plant butter.
  4. Pour mixture into skillet and top with plum slices. Sprinkle top with raw sugar.
  5. Bake until top is golden brown and a tester inserted in center comes out clean, 50 to 60 minutes. Serve with non-dairy ice cream.
